When items or samples are placed inside the oven, their surfaces come into contact with the hot and dry air. The heat energy is transferred from the air to the external surface of the items through the process of conduction. As the heat continues to penetrate the items, it gradually moves toward their center, reaching deeper layers through the same conduction process.
Microorganisms present on the surfaces of the items are particularly affected by the hot air. The heat causes the water content inside the microorganisms to evaporate. This process of evaporation leads to several detrimental effects on the microorganisms.
